Smothered okra


My parents planted okra this year, but the lack of rain for a month managed to reduce the harvest to just enough to eat for suppers, but not an abundence to add to the freezers for making gumbo. In my world Gumbo has okra in it...But it can't be slimy. It must be cooked down to dry out the slime. Slime = ick! Time to smother Okra.
My parents found a neighbor that grew plenty of Okra ( which is better because then he picks it...it is itchy on the arms.) My Mama ran 2 bushels two through the food processer and then she brought me over a Large Magnalite Oven Roaster, prefered in Cajun kitchens. She also had a large roaster in her oven. Baked for several hours, our okra is just right for adding to Okra Gumbo. So now there are 14 seal a meal bags of 1.5 pounds of okra in the freezer just waiting for the gumbo pot.
