In writing up a shopping list for Bedstemor I thought about the difference between Cajun and Danish cooking. In Louisiana we have pink concoction called
Remoulade which looks like mayo and ketchup mixed together with pickles and spices, often served on shrimp and boiled eggs. It actually looks a lot like 1000 island salad dressing, only thicker.
While I lived in Greve, Benny introduced me to the
Dansk Remoulade which took me years to learn to pronounce in Danish. I liked it and we often would have a quick late night snack of Danish salami and remoulade with fried onions on rugbrød while we watched Sams Bar (Cheers) on TV. After my “housewife “Danish got better I realized why I was feeling so, um …gassy…Those were not pickled cucumbers, but cabbage and cauliflower!
Loryn has learned , over the years to love Danish Remoulade..., especially on her hot dogs or sausages. And two of the big bottles don't last the full year. Please send more, bedstemor!

The only time I ever had remoulade before I met Mads was on a shrimp po boy...just like you described. Now I LOVE DANSK remoulade...and would rather have it on my french fries than ketchup!!!
