I'm Going in....

the kitchen, that is... I promised to make Benny a few fresh loaves of Rye bread, or rugbrød. I used to make some using a sourdough starter Bedstemor gave me, but that was when I was not working full time, as that recipe took almost 16 hours to complete. So she sent me a recipe using buttermilk and yeast...Benny made it once, but I don't think it turned out right, so I'm going to try it myself.
We can't buy good Danish rugbrød, anywhere. We have found the small German loaves of "health" bread at a store called Cost Plus World Market. We have to drive to Lafayette to buy it. It is in vacuum packed plastic and sitting on the shelves so it must be full of preservatives, and it cost $2.99 for about 8 slices of bread. I don't think it is the best way.
I was upset to find the rye flour I usually buy at the local Wal-Mart was clearanced out. That means they won't carry it any more. I have to buy my rye berries at Whole Foods in Baton Rouge, so I went ahead and bought all 4 boxes of rye flour to put in the freezer.

So for those of you in USA with out the easy access to rugbrød here it is....
Hmmm I just realized that she missed the baking instructions....

Rugbrød bagt med Gær

1 stort eller 2 små

150 g Knækkede/skårne rugkerner
3½ dl. kogende vand
25 g gær
2½ dl kærnemælk
2 spsk. sirup
1 teske salt
300 g groft rugmel
350 g hvedemel

1. Hæld kogende vand over rugkernerne
og lad dem stå til vandet er lunkent ( ca.
en halv time )

2. Rør gæren helt ud med det lunkne vand

3. tilsæt de udblødte kærner, samt alle øvrige
ingredienser og ælt degnen


Rye bread baked with yeast
My own translation…

1 large or 2 small loaves

150g rye berries (I grind them in the blender a bit first)
3 ½ dl. boiling water
25 g yeast* This is about 10g of active dry yeast (the only kind we can get here)look here for conversion chart or here
2 ½ dl buttermilk
2 tbsp. syrup
1 teaspoon salt
300 g of whole rye flour
350 g wheat flour

1. Pour boiling water over rye berries and let them stand in the water is lukewarm (about
half hour)

2. Stir yeast completely into lukewarm water until dissolved.

3. Add the soft berries and all other
ingredients together and mix. Knead all together. I use my Kitchen aid with a dough hook to do this step. Pour into oiled loaf pans.

4) Cover with damp towel and place in a warm place to rise, about 1 to 1 1/2 hours.
